Tacos de tripa

Este es un simple homenaje a mi infancia. Cuando yo iba en la primaria había un tianguis que tenía un puesto especialmente dedicado a vender tacos de tripa. El tianguis sólo se ponía los lunes, así que había que ser puntuales.

El puesto tenía una lona roja y abajo de ella había una enorme parrilla (era yo pequeño y creo que todo se veía grande) sobre la que burbujeaban kilos y kilos de tripa que se estaban cociendo. El pretexto para comerlas era que te curaban los problemas de la garganta, pero eso me lo dejé de creer la tercera vez que fuimos.

Caminando en busca de la nostalgia me dio tristeza pensar que habíamos relegado a la tripas a una esquina en la parrilla de tacos de bistek, cecina y suadero. La tripa ya no es la protagonista que pueda atraer multitudes con ese olor tan mineralizado y ese sabor fuerte que se acompaña bien con una salsa roja.

Tal vez los vendedores de tacos de tripa ahora se dediquen a manejar taxis o fueron reubicados por el mercado en un intento de "adaptarse o morir". Tal vez el vendedor de suadero le guarda fidelidad a las tripas, pero teme lanzarse de nuevo al negocio porque puede no resultar tan popular como antes. En fin, problemas de mercado.

Seguiré caminando pasos sobre la nostalgia, debe haber algún lugar que todavia guarde ese olor y ese sabor característico de otros tiempos.
